4 cups of already cooked rice
1 chopped large onion
2 chopped tomatoes
1 chopped large green bell pepper
1/2 cup of hot salsa
1 chopped large red pepper
1/2 cup of corn kernels (optional)
At low heat in a large frying pan, add the chopped onion, green and red peppers. Stir until they are soft, then incorporate the tomatoes and salsa. When the mixture is bubbly hot, stir in the rice and optional corn. Simmer until everything is hot. Take off the heat and serve.
